I love the tradition of getting the WE Energies Cookie Book every November! Each recipe has a short personal story about where it came from. Food/recipes can tell such stories (see most food related posts in our Write Relief Blog!) and I enjoy hearing the "why." It somehow makes it taste even better and also makes me want to share with others. I try and bake for guests at Kathy's House about once a week. A muffin or cookies to grab on the way to or back from the hospital. A small #bellyhug from Right Relief :)
This holiday-flavored cookie recipe is a keeper for sure! I LOVE ginger flavored sweets during the fall/holiday season! Enjoy!
Ingredients
1 1/2 c. shortening
2 1/2 c. sugar, divided
2 eggs
1/2 c. honey
4 c. flour
4 tsp. baking soda
3 tsp. cinnamon
2 tsp. ground ginger
1/2 tsp. salt
Directions
Preheat oven 350. Cream shortening and 2 cups sugar. Add eggs, honey; mix well. In separate bowl, combine flour, baking soda, cinnamon, ginger and salt; gradually add to creamed mixture. Shape dough into 2-inch balls; roll in remaining sugar. Place 2 inches apart on baking sheet. Bake 9-11 minutes. Once cooled, spread with cream cheese frosting (below).
Cream Cheese Frosting
1/2 c. butter, softened
8 oz. cream cheese, softened
1/2 tsp. vanilla
3 1/2 c. powdered sugar
Beat butter and cream cheese until fluffy; add vanilla. Gradually add powdered sugar and beat until smooth.
